Hidden deep in the Apuseni Mountains lies Raven’s Nest—a place where time slows and nature whispers. It’s not just a place to stay, but a village of stories, skies, and silence. Here, mornings begin above the clouds and evenings end by the fire or under stars at the forest cinema. At Sable, the onsite restaurant, Transylvanian flavors are reimagined with fire, smoke, and wild herbs. Beyond the nest, the mountains call—caves, trails, and waterfalls await. It’s an escape for those seeking wonder, comfort, and connection. A place that stays with you, long after you’ve left.
RESTAURANT
For the first time, Sable opens its doors to a few beyond the Nest. Curated by Chef Silviu Chelaru, the menu is seasonal, fire-kissed, and deeply rooted in the land. Seats are few, reservations essential. It’s not just dinner—it’s a rare glimpse into the soul of the mountain.
*Checked in guests don’t need a reservation for the restaurant.

GET TO KNOW OUR CHEF
Every story at Raven’s Nest carries its own weight, and in the heart of the village, that story comes alive on the plate. Chef Silviu Chelaru is the creative force behind it, an experienced chef whose career has been shaped by fine dining kitchens, refined techniques, and a deep respect for ingredients.
At Sable Cuisine, his philosophy is as honest as it is demanding: premium products sourced with care, cooked with precision, and plated with intention. Each dish reflects a balance between heritage and innovation, carrying forward the essence of Transylvania while reaching the standards of international fine dining.
Silviu’s background is rooted in years of dedication to culinary craft, from mastering classical techniques to reinterpreting flavors through a contemporary lens. What he brings to Raven’s Nest is not only skill, but a vision, to create an experience where every meal feels deliberate, intimate, and memorable.
Dining at Sable is not about excess. It is about focus. About letting an ingredient taste like itself, only at its very best. About giving guests more than food: giving them a sense of place, a moment of pause, and the memory of flavor tied to a mountain horizon.
“I cook with fire, with instinct, and with heart. Technique matters, but passion is what turns a dish into an experience people carry with them long after the last bite.” – Chef Silviu Chelaru
Here, food is not a detail of the stay, it is the anchor. Sable Cuisine completes the story of Raven’s Nest, reminding every guest that what we taste can be as powerful as what we see or feel.
